How old is the car ? Car color do change over time specially if it is parked out in sun. That could be reason of touch up not matching with car color now.
Touch up doesn't match

I've got some chips on the door of my 2018 GLC 250 so I ordered the proper Mercedes touch up kit. But the paint is coming out darker than the car's colour. Dealer swears it's the correct touch up and I checked the name which does match the car's colour name. Any idea why this could be? It's unusable as is.

Did you make sure that the touch up paint was thoroughly mixed before application? Have found the MB touch up paint pretty good match wise, but Metallics are always difficult to get a good colour match due to brushing rather than spraying.
